Award-winning Head Chef Ray Smikle bounds with enthusiasm not only about his food
but also about people. He loves his customers and it is not unusual to see him chatting
to them at the end of their meal. ‘That’s what it is all about,’ says Ray, ‘I love
to chat to people, find out what they enjoy, get feedback on the food as well as
the service and the overall atmosphere.’ Many of his customers become his friends.
Ray is not a shy and retiring chef who hides behind his food, he is bursting with
personality and that is reflected in the food that is put on the plate.
